This unusual dessert owes its birth to Duke Cosimo III of the Medici, who visited the small Tuscan city of Siena. In honor of his visit, the confectioners of the city prepared tiramisu. The Duke was very pleased with the delicacy.

Of course, this is not the main reason for the popularity of this delicacy, because, among other things, tiramisu is delicious! Already in the 19th century, it was prepared not only in Italy, but also in many other European countries. As for Italy itself, local restaurants always have this dessert.
The main components of the classic tiramisu are mascarpone cream cheese, and "savoyardi", that is, Italian vanilla biscuit cookies. However, the dessert also allows some culinary "liberties". So, when preparing tiramisu at home, in the absence of mascarpone cheese, it can be replaced with sour cream, with a high fat content, and instead of savoiardi, take some kind of biscuit.
First, a mixture is prepared, consisting of strong espresso and liquor (you can also use port wine or cognac). Sponge cookies are soaked with this cocktail, a layer of cream is placed on top, which is made from mascarpone (sour cream), and egg yolks whipped with vanilla sugar. All this is then sprinkled with grated chocolate, and then placed in the refrigerator for 5 to 7 hours. Alternatively, tiramisu can be garnished with fruit, such as peach, pineapple, or orange slices. In good restaurants, it is often garnished with fresh strawberries, blueberries or raspberries. There is a variant of “colored” tiramisu, when mashed berries are added to this dessert, giving it the appropriate color.
