  • 250 g cottage cheese (9%)

  2. Rub the cottage cheese through a sieve and combine with the prepared mass, grate the lemon zest on a fine grater, finely chop the lemon with a knife. Mix soda with chopped lemon and zest, add to the curd mass.
  3. Pour the sifted flour into the mass and knead the dough. Beat the well-chilled proteins in a stable foam and add to the dough in two steps, gently mixing. 4. Lubricate the cake mold with oil, put the prepared dough and put in an oven preheated to 180 degrees, bake for about 50 minutes. Remove the cooled cake from the mold and sprinkle with powdered sugar!
