Bailin Gongfu is a famous red tea from the small town of Bailin, Ningde County in northern Fujian Province. For Bai Lin Gongfu, delicate, fleecy leaves and buds are harvested from the Da Bai Cha variety (the same variety from which the famous white teas Silver Needles with White Fluff and White Peony are made in Fuding County). The leaves and buds for this tea are harvested only in early spring.
In appearance, the tea consists of black tea leaves and contains a small amount of golden-colored “needles”. It is necessary to brew with boiled water close to boiling, leave for 5-6 minutes. The infusion of tea turns amber-red.
The taste of tea is harmonious, with a slight sourness and pronounced astringency. The aftertaste is not very long, but memorable for a long time. After the first sip of this tea, you will be enveloped in the aroma of floral honey fields. The taste of dark honey and floral aroma prevails here.
Tea can be brewed in a gaiwan or Chinese teapot up to six to seven times. It is better to drink from small dishes, inhaling the aroma. Tea according to its taste and aroma is recognized by tea experts as the most harmonious.
Bailin Gongfu is good for afternoon tea. Red tea is a fully fermented tea, so you can add milk, sugar or lemon to taste.
