The appearance of seedlings of this tea tree in Taiwan at the beginning of the last century is shrouded in a legend about a devout peasant who prayed to the Chinese Goddess of Mercy or Divine Guan Yin.
One day, having appeared to him in a dream, the Goddess warned that when he went to the forest the next day, he would see a sign sent from heaven. Indeed, in the morning in the forest, he saw a tea tree, the shape of which resembled the curves of the Guan Yin statue. The farmer dug up a tree and planted it in his garden.
For a whole year he looked after him and in the spring he collected the leaves of the first harvest. Having brewed them, he got a tart drink with a slight sweet aftertaste, a beautiful cognac color, the long aftertaste of which had sandalwood nuances. Its tea leaves fell to the bottom like iron, so the tea was called "Iron Goddess of Mercy".
This tea comes from the town of Anxi, in the province of Fujian, in the Southeast of China. But its orthodox cooking process differs from the mainland method, by roasting the leaves over charcoal for three days. Tea brings a feeling of comfort and is especially good in the evening in a club setting.
