There are three most commonly used approaches to how to brew premium tea. For delicate teas such as Bi Lo Chun, the topping method is your best bet, as this method can greatly reduce the chance of the tea being over-brewed, even if the water temperature is slightly warmer than it needs to be. The method is simple and convenient.
Step 1
Depending on the volume of the container, prepare tea leaves in a ratio of 1:50. That is, 2-5 grams of tea is required per 100 ml of water, but you can change the amount of tea to your liking.
Step 2
Heat the container with water (optional). Fill the container with water up to 2/3. Wait a few minutes before the water cools down to 75-80°C.
Note: be sure to wait a few minutes before the water cools down. Otherwise, too hot water will destroy the taste of tea.
Step 3
Add tea leaves. You can tilt the bowl slightly from side to side so that all the leaves sink to the bottom. It's time to enjoy the melodic dance of golden leaves in your cup.
Step 4
Drink after 3-4 minutes, when all the tea leaves fall down.
Note: if the leaves do not sink, it is most likely that the temperature is too low. Use slightly warmer water for the second brew.
Drink until 1/3 or 1/4 of the decoction is left in the cup, then add warm water and do this a few more times.
